Here’s a tasty healthy 2 course dinner that went down a treat with the whole family!
Posh Fish n Chips
Healthy Chocolate Mousse
1 medium sweet potato
olive oil
Dried Rosemary
Sea Salt & black pepper
2 pieces white fish
zest of half lime
Coconut oil
Simply chop sweet potato into even sized wedges. Brush with olive oil, sea salt, rosemary and pepper. Pop in oven at 170C for approx 30 minutes until just beginning to brown.
Meanwhile zest lime and add to large pan with coconut oil. Pan fry fish for approx 5 minutes until just beginning to flake. Serve with vegetables of choice.
Healthy Chocolate mousse
2 ripe avocados
1 ripe banana
2 tbsp honey
1/4 cup almond milk
1/4 cup cocoa powder
Simply mix the whole lot in a blender.
Chill and serve 🙂
