Christmas isn’t generally the time for low-fat, low-calorie recipes.

But if you’re concerned about overindulging, here are some healthier options for this year’s Christmas / New Year parties:
Want to know the secret to roast potatoes with a lower calorie count? Use cooking oil spray and a very hot oven. It gives the potatoes a crunch with much less fat than the usual recipe.

  • Ingredients
    ~ 1.2kg/2lb 12oz floury potatoes, such as King Edward, peeled, cut into chunks
    ~ cooking oil spray
    ~ salt and freshly ground black pepper

Method
Preheat the oven to 230C/210C Fan/Gas 8 or its hottest setting.

Boil the potatoes in lightly salted boiling water for 3-4 minutes, then drain in a colander. Fluff up the edges using a fork, then season with salt and pepper, spray well with cooking oil spray.

Tip the potatoes into a large baking tray and roast for 25 minutes. Mix them around, spray with more cooking oil spray and roast for a further 25 minutes, until golden-brown all over.

Tandoori Chicken Party Skewers

These mini skewers of spiced chicken make great party food and are so simple to put together.

For this recipe you will need 15 x 15cm/6in bamboo skewers.

Ingredients

Method

  1. Mix the chicken strips, yoghurt and tikka paste together in a bowl. Cover with cling film and set aside in the fridge to marinate for 20 minutes, or up to 4 hours. Soak the bamboo skewers in water for at least 20 minutes.
  2. Preheat the oven to 220C/200C Fan/Gas 7. Place 2 baking trays in the oven to preheat.
  3. Thread 1 or 2 strips of chicken onto each skewer, not too tightly as this may cause uneven cooking. Place the chicken skewers onto the preheated baking trays, spaced well apart and bake for 20 minutes, turning half-way through. You may need to tip some cooking juices out of the baking tray when you turn them so that the skewers brown up nicely.
  4. Check that the chicken is completely cooked before serving. Serve scattered with freshly chopped coriander and lime wedges on the side.
